Spicy chinese noodles with fresh gulf shrimp8 servings
salt
3 tablespoons tomato paste
4 to 5 cloves of garlic minced very fine
4 teaspoons of minced fresh ginger
4 teaspoons hot paprika
1/2 teaspoon ground turmeric
4 tablespoons water
1/2 cup peanut oil
2 small onions or 1 large onion, minced
2 pound of fresh gulf shrimp cleaned peeled and deveined. jumbo or large
6 tablespoons asian fish sauce
2 tablespoons rice vinegar
2 teaspoons asian sesame oil
4 to 5 scallions, white and light green parts thinly sliced
12 pound fresh chinese egg noodles, japanese yakisoba noodles or linguine whatever you would like to use.
lime or lemon wedges for serving
bring a large pot of water to a boil and add salt. in a small bowl, stir the tomato paste with the garlic, ginger, paprika, turmeric and water.
In a large skillet, heat the peanut oil. add the onion and cook over a med-high heat. stirring occasionally, until it begins to brown, about 5 minutes. add the tomato paste mixture and cook, stirring constantly for about two minutes. Add the shrimp and cook until thery are just opaque, about 3 minutes. do not overcook the shrimp. Add the fish sauce, vinegar, sesame oil and half the scallions. Remove from the heat.
Boil the noodles for about 1 minute drain and reserve 1 cup of the noodle cooking liquid. Add the noodles to the skillet and toss to coat. Stir in the reserved noodle liquid and cook, tooing for 1 minute longer. Season with salt. Transfer the noodles to plates and garish with the remaining scallions and serve with lime wedges.
