Curry Sauce:
3 tbs. softened butter or chicken broth
1 cup chopped onion
1 cup chopped pared apple
1 clove garlic,crushed
1/4 cup all-purpose flour
2-3 tsp. curry powder
1/2 tsp. ( optional)
1/4 tsp. ground ginger
1/4 tsp. ground cardamom
1/2 tsp. pepper
2 cans (10 3/4 oz) condensed chicken broth
2 tsp. grated lime peel
2 lb. raw fresh gulf shrimp , shelled and deveined 16-20 count colossal size
1/2 tsp salt (optional)
1 small onion sliced
1/2 lemon, sliced
4-6 whole black peppercorns
1/4 cup chopped chutney
1/4 cup chopped green pepper
3 cups cooked white rice
Make Curry Sauce: In a large non-stick skillet , spray with non stick cooking spray. Saute onion, apple, garlic, and curry powder, about 5 minutes in butter or chicken broth. Remove from heat: sitr in flour, 1/2 tsp salt, ginger, cardamom and pepper. Gradually sitir in 2 cans of broth, lime juice, and peel. Bring to a boil, stirring constantly. Reduce heat: simmer, uncovered, 18 minutes, stirring occasionally. Meanwhile, cook fresh gulf shrimp: Rinse fresh gulf shrimp under cold running water. In a large sauce pan, combine 1 qt water, salt, onion, lemon, and black peppers: bring to a boil. Add shrimp and return to a boil. Reduce heat: simmer, uncovered: 5-10 minutes, until tender do not over cook. Drain shrimp: add to curry sauce with chutney. Heat gently just to a boil. Serve with white rice and individual bowls of chutney, chopped tomaton and green pepper.
