Fresh Gulf Shrimp and Pineapple Rice,Fresh Gulf Shrimp and Pineapple Rice
1 can pineapple chunks, packed in juice
1 tbs. soy sauce
1/2 tsp. turmeric powder
1 1/2 tsp. apple juice concentrate
1/2 lb fresh gulf shrimp, shelled and cleaned
2 medium garlic cloves, minced
4 cups cooked brown or white rice
3 green onions, sliced
1 medium jalapeno pepper, seeded and finely chopped
1/2 cup thinly sliced red bell pepper
Drain pineapple chunks, reserving the juice, and set aside. In a small bowl combine the soy sauce, turmeric, apple juice concentrate and 1 tablespoon of the reserved pineapple juice. Set aside.
In a large skillet, cook the shrimp with the garlic in 1/2 cup of the reserved pineapple juice until the shrimp is just opaque 2-3 minutes. DO NOT OVERCOOK. Remove the shrimp with a slotted spoon and set aside.
Add the cooked rice to the liquid remaining in the pan and stir fry for 1 minute. Stir in the soy sauce/turmeric mixture and cook until the rice is yellow. Sitr in the pineapple chunks, green onions, jalapeno and red pepper and cook for about 1 minute. Add the Shrimp and any collected juices to the pan. Mix well and cook until the shrimp are heated through.
Serve hot.
