Fresh Gulf Shrimp and Bacon FrittataFresh Gulf Shrimp and Bacon Frittata
2 cups of egg white or egg substitute or 2 cups of eggs
3/4 cups of mozzarella cheese
1 medium to large yellow onion, cut into wedges
1/2 teaspoon dried italian seasoning
1/8 teaspoon ground black pepper
4 ounces diced cooked fresh gulf Shrimp peeled.
3 strips of peppered bacon, cooked and drained, and crumbled.
Place the egg and mozzarella in a medium-sized bowl. Stir to mix well, and set aside
Coat a 10 inch ovenproof skillet with olive oil. and preheat over medium heat. Add onion, Italian seasoning, and pepper, and stir-fry for about 4 minutes, or until the onion is crisp-tender.
Add the cooked Fresh Gulf Shrimp and bacon to the skillet. Stir to mix well, and spread the mixture evenly over the bottom of the skillet.
Reduce the heat to lovw, and pour the egg mixture over the onion mixture. Cook without sitrring for 10 to 12 minutes, or until the eggs are almost set.
Remove the skillet from the heat, and place under a preheated broiler. Broil 6 inches from the heat for about 3 minutes or until the eggs are set but not dry and top is nicely browned.
Cut the frittata into wedges, and serve immediately.
